Labour, Labour Relations and Occupational Identities in Hotels, Restaurants and Cafes (18th-20th centuries)
FOST (Social & Cultural Food Studies) bestudeert de meest diverse aspecten van de geschiedenis van voeding: kruideniers en publiciteit, de maaltijden van de elite, de taal van het restaurant, voeding en identiteit, kookboeken en nationale identiteit, de geschiedenis van de koelkast, enz. De conferentie van 16 en 17 december 2011 bekijkt de geschiedenis van drank en voeding vanuit een andere invalshoek dan tot nog toe gebruikelijk was. Deze bijeenkomst focust op de geschiedenis van koks, kelners en ander keuken- en zaalpersoneel. Hoe werd dit personeel getraind en aangeworven? Welke conflicten deden er zich op de werkvloer voor en wat waren redenen voor ontslag? In welke mate werd dit personeel in het buitenland gerecruteerd en hoe keek het lokale horecapersoneel tegen deze collega’s aan? Hoe en wanneer kregen vakbonden in deze sector een voet aan de grond? Hoe percipieerden de horecawerkers zichzelf? Was het goed verdienen in de horeca …?
